Chocolate-Mint Cups - cooking recipe

Ingredients
    2 (1 oz.) sq. unsweetened chocolate, melted
    1 c. butter, softened
    2 c. powdered sugar
    4 eggs
    2 tsp. vanilla extract
    1 tsp. peppermint extract
    12 vanilla wafers, finely crushed
    1/4 c. finely chopped pecans
Preparation
    Melt chocolate over low heat, stirring constantly.
    Set chocolate aside to cool.
    Combine butter and sugar, creaming until light and fluffy.
    Add eggs, one at a time, beating well after each addition.
    Add chocolate and extracts; mix well.
    Combine vanilla wafers crumbs and pecans; stir well.
    Sprinkle half of crumb mixture into 12 ungreased muffin cups.
    Spoon chocolate mixture over crumb mixture and top with remaining crumb mixture. Cover and freeze until firm.
