Vi'S Pea Soup (Thick) - cooking recipe

Ingredients
    1 ham hock
    1 medium potato
    2 c. dry split peas (16 oz. bag), wash and check for stones
    3 carrots
    2 medium onions
    1 bay leaf
    2 stalks celery (tops, too)
    salt and pepper
    1/4 c. chopped parsley
Preparation
    Chop vegetables into medium chunks.
    Place in large pot with ham and washed peas.
    Add enough water to cover ham.
    Add bay leaf and pepper, no salt. Cover and bring to a boil, stirring.
    Reduce heat immediately and simmer about 2 hours or until the split peas have melted away.
    Now you can add salt if you wish.
    Remove bay leaf.
    Make sure you have some good meat left on the bone.
