Vegetable Hampshire Salad - cooking recipe
Ingredients

1 pkg. (3 oz.) lemon jello
1 c. hot water
2 Tbsp. lemon juice
1 c. small curd cottage cheese
1/2 c. sour cream
1/2 c. frozen peas, bring to boil in small amount of water and drain
1/2 c. thinly sliced carrots, cooked 5 minutes in small amount water and drained
1/2 c. finely diced celery
1/2 c. finely diced green pepper
2 Tbsp. minced pimiento
Preparation

Dissolve jello in hot water; add lemon juice and chill until slightly thickened.
Blend cottage cheese, sour cream and salt together.
Stir into jello.
Add remaining ingredients.
Chill until firm or overnight.
Can use lime jello and canned peas.
