Little Shoes (Papoutsakia)(Greek) - cooking recipe

Ingredients
    6 medium eggplant
    1/2 c. butter
    1 to 2 onions, finely chopped
    1/2 lb. ground beef or lamb
    salt and pepper
    1 Tbsp. parsley
    1/2 c. tomato sauce
    grated cheese
Preparation
    Cut eggplant in half lengthwise.
    Scoop out insides and chop. Fry shells in a little butter until a bit soft, then put in baking dish.
    Saute onions in all but 2 tablespoons butter. Add meat and brown. Add eggplant pulp, salt, pepper, parsley and sauce.
    Mix well and simmer 15 minutes.
    Cool.
    Fill eggplant shells. Sprinkle with cheese. Bake at 350\u00b0 until soft, approximately 30 minutes. Preparation time: 45 to 60 minutes.
