Ingredients

4 c. potatoes, cubed
1 small onion
2 Tbsp. Bisquick or flour
2 eggs
salt and pepper to taste
Preparation

In blender, combine egg, onion and Bisquick.
Set on \"chop\"; blend until smooth.
Gradually add potato chunks.
Blend on low speed.
Heat oil in large skillet.
Spoon potato batter into skillet.
Turn each potato cake once.
Fry until golden brown. Serve for breakfast, lunch or dinner.
