Nanny'S Tomato Sauce - cooking recipe

Ingredients
    1 lb. tomatoes
    sugar
    oil (canola, vegetable)
    vinegar
Preparation
    Plunge tomatoes in boiling water to loosen skins, approximately 2 minutes.
    Peel tomatoes and chop.
    Heat oil in iron skillet; add tomatoes.
    Add sugar and vinegar to taste.
    Cook down to thick paste.
    Should have a sweet/sour taste.
    Add more sugar and/or vinegar to taste.
    Serve on top of black-eyed, purple hull or crowder peas.
    Good with boiled okra.
