Irish Potatoes - cooking recipe
Ingredients

1 medium size potato (baked)
1 lb. confectioners sugar
1 tsp. vanilla
1 to 1 1/2 c. flaked coconut
cinnamon (to coat)
Preparation

Turn out hot potato pulp into a small bowl.
Add sugar, mashing it in. (Potato should be hot enough to melt sugar.)
Add vanilla and coconut and mix well.
Work mixture by kneading until it can be shaped more or less like a miniature potato.
