Ingredients

1/2 c. coarsely chopped dried apricots
1/2 c. boiling water
1 c. cubed mango or nectarine
1/3 c. sugar
1/4 c. raisins
1 Tbsp. white vinegar
1 Tbsp. fresh lemon juice
2 Tbsp. coarsely chopped walnuts
2 tsp. chopped ginger root
1/4 tsp. salt
Preparation

In medium saucepan, combine apricots and water; set aside 10 minutes.
Stir in remaining ingredients.
Bring to boil over high heat; reduce heat and simmer, stir frequently, 10 minutes or until thickened.
Serve warm or chilled.
