Zucchini-Carrot Au Gratin - cooking recipe

Ingredients
    3 c. thinly sliced carrots (about 4 large)
    7 c. sliced zucchini (about 2 lb.)
    1/4 c. butter or margarine, cut into small pieces
    1 tsp. salt
    1/2 tsp. pepper
    6 oz. grated cheese (Gruyere or Cheddar)
    1/2 c. chicken broth
Preparation
    In a large saucepan, cover carrots with water.
    Bring water to a boil and cook carrots about 3 to 5 minutes or until just tender; drain.
    Preheat oven to 375\u00b0.
    Place zucchini in a greased 9 x 13-inch glass baking dish.
    Place carrots over zucchini.
    Place pieces of butter evenly over carrots.
    Sprinkle salt, pepper and cheese evenly over vegetables.
    Pour chicken broth evenly over top.
    Cover and bake 20 minutes.
    Bake uncovered 25 to 30 minutes longer or until cheese browns and vegetables are tender.
    This freezes well.
