Oatmeal Carrot Cake Bread - cooking recipe

Ingredients
    1 c. oats (uncooked)
    1/2 c. skim milk
    2 1/2 c. all-purpose flour
    1 c. firmly packed brown sugar
    1 Tbsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. ground cinnamon
    1/4 tsp. salt (optional)
    1 1/2 c. shredded carrots (3 medium)
    1/2 c. raisins
    1 (8 oz.) can crushed pineapple in juice (undrained)
    4 egg whites or 2 eggs
    1/4 c. vegetable oil
    1 tsp. vanilla
Preparation
    Preheat oven to 350\u00b0.
    Lightly spray bottom only of a 9 x 5-inch loaf pan with nonstick cooking spray or grease lightly.
