Chicken Enchilada Casserole - cooking recipe
Ingredients

1 1/2 to 2 1/2 c. cooked chicken meat
1 can enchilada sauce
1/4 c. chopped onion
corn chips
1 can mushrooms or cream of chicken soup
1 c. chicken broth
salt and pepper
grated cheese
Preparation

Boil chicken or use leftover cooked chicken and cut into bite-sized pieces.
Add onion, enchilada sauce, soup, salt and pepper.
Line casserole dish with chips and pour the chicken broth over them.
Top with meat mixture.
Cover with more chips and sprinkle with grated cheese of your choice.
Bake at 350\u00b0 for 20 minutes or until casserole is bubbly and cheese is melted.
