Rice And Peas - cooking recipe

Ingredients
    4 c. boiling water
    1/2 c. dry pigeon peas
    1 1/2 tsp. salt
    1 c. cooked rice
    1/2 c. chopped onion
    2 Tbsp. butter or margarine
Preparation
    Place water in 3-quart saucepan.
    Bring to rapid boil.
    Wash the peas well under cold running water, about 2 minutes.
    Place peas in boiling water.
    Add salt; cover and reduce heat.
    Simmer 45 minutes.
    Stir in rice, onion and butter.
    Stir to blend. Cover and simmer until all water is absorbed, about 2 minutes. Fluff mixture with fork.
    Makes 4 to 6 servings.
