Garden Gumbo - cooking recipe

Ingredients
    8 tomatoes or 2 cans stewed tomatoes
    2 c. water
    3 to 4 sliced yellow squash
    1 large onion, chopped
    1 1/2 c. raw rice
    2 tsp. Italian spice
    2 tsp. garlic
    salt and pepper to taste
    1/4 c. Parmesan cheese
    more Parmesan cheese
Preparation
    Peel and slice tomatoes into chunks.
    Combine all ingredients in a large saucepan.
    Bring to a boil, then simmer slowly for 30 minutes.
    Sprinkle with Parmesan before serving.
