Chicken Indienne - cooking recipe

Ingredients
    2 chicken breasts, boned and skinned, fat removed
    1 Tbsp. grated fresh ginger
    1 Tbsp. cornstarch
    1 Tbsp. water
    1/2 tsp. salt
    2 Tbsp. sweet mango chutney, coarsely chopped
    2 Tbsp. cider vinegar
    1 Tbsp. sugar
    2 Tbsp. oil, divided
    1 medium onion, thinly sliced
    1 red bell pepper, julienned
    1 medium carrot, julienned
    1/2 tsp. curry powder
    4 portions steamed rice
Preparation
    Thinly slice chicken breasts across the grain.
    In a medium bowl combine chicken, ginger, cornstarch, water and salt.
    Cover and refrigerate.
