Garden Patch Meatball Soup - cooking recipe

Ingredients
    2 medium potatoes, peeled and cubed
    2 medium carrots, peeled and sliced
    1 medium onion, chopped
    4 medium celery stalks with tops, coarsely chopped
    1 (16 oz.) can tomatoes
    2 tsp. salt
    1 tsp. pepper
    1 bay leaf
    1 lb. lean ground round
    1 egg
    1/4 c. chopped fresh parsley
Preparation
    In large saucepan, stir together potatoes, carrots, onions, celery, tomatoes, salt, pepper, bay leaf and 3 cups water.
    Cover; simmer 30 minutes.
    Mix together beef, egg and parsley.
    Shape into 1-inch balls.
    Add to soup.
    Simmer covered 15 minutes or until meatballs are tender.
