Broccoli-Cheddar Soup - cooking recipe

Ingredients
    3 qt. water
    6 c. small fresh broccoli florets (about 2 large heads)
    vegetable cooking spray
    1/2 tsp. margarine
    1 c. chopped onion
    1 clove garlic, minced
    1 c. plain nonfat yogurt
    1/3 c. flour
    2 (10 1/2 oz.) cans low sodium chicken broth
    3/4 c. water
    1/2 tsp. salt
    1/2 tsp. dried whole oregano
    1/4 tsp. dried whole thyme
    1/8 tsp. black pepper
    1/8 tsp. red pepper, ground
    1 c. (4 oz.) reduced fat sharp Cheddar cheese, shredded
Preparation
    Bring 3 quarts of water to a boil in a Dutch oven; add broccoli and cook 7 minutes until tender.
    Drain; set aside.
