Old-Fashioned Spicy Apple Butter(Not So Sweet) - cooking recipe
Ingredients

10 lb. tart cooking apples, pared, cored and quartered (about 20 c.)
3 to 4 c. apple cider
3 1/2 to 4 c. sugar or less to taste (I use less)
4 tsp. ground cinnamon
2 Tbsp. vinegar
1 1/2 tsp. allspice
1 tsp. ground nutmeg
1/4 tsp. ground cloves (I use a scant amount)
Preparation

Prepare apples as stated.
Cook.
Run through sieve as for applesauce.
Heat in large kettle, adding remaining ingredients. Cook for 45 minutes.
Place in sterile jars and add heated lids. Water bath for 10 minutes.
