Chicken Kellaguin - cooking recipe
Ingredients

1/2 baked chicken
1/3 c. fresh coconut, finely shredded
5 green onions with stems, diced
1/2 Tbsp. red pepper flakes
2 lemons, freshly squeezed
salt
pepper
Preparation

Using a fork, separate chicken from bones.
Remove skin, if you desire, and then shred chicken.
Add chicken, coconut, green onions and red pepper flakes.
Mix thoroughly.
When dish is ready to be served, add lemon juice; mix well.
Add salt and pepper to taste. Serves 4.
