Mom'S Light Fruitcake - cooking recipe

Ingredients
    1 lb. margarine
    2 c. sugar
    6 eggs
    1 1/2 c. flour
    2 oz. real lemon extract
    1 lb. golden raisins
    1 c. glazed pineapple
    2 c. glazed cherries
    2 c. pecan halves (coat well with flour)
Preparation
    Cream together margarine and sugar until fluffy, adding eggs, flour and lemon extract.
    Fold in flour coated fruits and nuts. Pour into greased and floured pans.
    Put in oven at 250\u00b0 for 1 hour.
    Put pan of water in oven also.
    Cool in pans, then remove and wrap in hot damp towel (can soak with rum).
    After towel has cooled, remove, wrap and put in fridge.
