Boston Baked Beans - cooking recipe

Ingredients
    parboiled 1 lb. dried pea beans, California pea beans or navy beans
    1 medium onion, chopped
    2 small ham hocks
    1 scant tsp. salt
    4 to 5 Tbsp. molasses
    2 to 3 Tbsp. dark brown sugar
    1 tsp. dry mustard
    1/8 to 1/4 tsp. ginger, ground
    3 1/2 c. boiling water
    pepper (to cover top of water)
Preparation
    Parboil dried beans for 45 minutes, covered; drain.
    Add all ingredients.
    Cook 1 hour in pressure cooker after stopper starts to jiggle.
    Or bake in covered oven-proof pot for 6 to 8 hours at 250\u00b0.
    Do not add all the water at once, but add water as needed, to keep beans moist.
