Oyster And Spinach Soup - cooking recipe

Ingredients
    1/2 c. finely chopped onion
    2 cloves garlic, minced
    1/2 c. butter
    3 (12 oz.) cans oysters, drained
    1/2 c. all-purpose flour
    1 1/2 qt. half and half
    2 c. chicken broth
    2 (10 oz.) pkg. frozen spinach, thawed
    1 Tbsp. salt
    white pepper to taste
Preparation
    Saute onion and garlic in butter until tender; add oysters which have been halved or chopped coarsely.
    Cook until edges of oysters begin to curl.
    Blend in flour; cook until bubbly. Gradually add half and half and cook, stirring constantly, until thickened.
    Stir in broth and spinach; bring to a boil.
    Remove from heat and add salt and pepper.
    Yields 8 to 10 servings.
