Mexican Cornbread Casserole - cooking recipe
Ingredients

1 lb. ground beef
1/4 c. chopped onion
2 eggs, beaten
2 c. cream-style corn
2/3 c. milk
1 (6 1/2 oz.) pkg. cornbread mix
6 slices American cheese
2 Tbsp. jalapeno pepper, chopped (optional)
Preparation

Preheat
oven
at
425\u00b0.
Brown
meat\tuntil
crumbly, draining off excess fat.
Add
onion
and pepper (if desired); set aside.
Combine eggs, 1
cup
corn and milk with cornbread mix. Stir just until
dry
ingredients
are
moistened.\tPour half of batter into greased
9-inch square pan.
Top with beef mixture, cheese slices and remaining 1 cup corn.
Pour remaining half of batter on top and bake 25 to 30 minutes.
