Spiced Watermelon Rind - cooking recipe
Ingredients

2 lb. white portion melon rind, cubed
5 c. sugar
2 c. cider vinegar
1 c. water
1 Tbsp. whole cloves
1 Tbsp. allspice
1 Tbsp. stick cinnamon
1 lemon, sliced
Preparation

Let melon stand overnight in salted water; drain.
Cover with fresh water and bring to a boil.
Cook over low heat until tender; drain.
Tie spices and lemon slices in cheesecloth.
Add sugar, water and vinegar; bring to a boil for 5 minutes.
Add melon and cook until transparent.
Pack in hot sterilized jars.
Makes 3 pints.
