Spinach With Burghul - cooking recipe

Ingredients
    2 lb. fresh spinach, washed thoroughly or 2 pkg. frozen spinach
    1 large onion, cut into slivers
    1 c. coarse burghul
    1/4 c. oil
    salt and pepper to taste
Preparation
    Lightly brown onion in oil.
    Add spinach, salt and pepper. Cover and cook for 5 minutes.
    Sprinkle washed burghul on top of spinach.
    Cover tightly and simmer for about 10 minutes or until burghul is tender.
