Gazpacho Salad(Very Cool And Refreshing) - cooking recipe

Ingredients
    1 medium tomato (1 c.), seeded and chopped
    1/2 c. diced seeded peeled cucumber
    1/4 c. chopped green pepper
    2 scallions, sliced
    2 Tbsp. vinegar
    1/4 tsp. salt
    dash of pepper
    1 pkg. lemon Jell-O
    1 c. boiling water
    1 c. cold water
Preparation
    Combine vegetables, vinegar, salt and pepper.
    Set aside. Dissolve Jell-O in boiling water.
    Combine with cold water.
    Let set in refrigerator until slightly thickened.
    Add vegetables. Chill.
    Serves 6.
