Ingredients

2 eggs, slightly beaten
1 1/2 c. milk
1/4 c. oil
2 tsp. grated orange rind
1/4 c. orange juice
2 c. pancake mix
Preparation

In a large mixing bowl, combine eggs, milk, orange rind and orange juice.
Add pancake mix.
Stir until smooth.
Pour batter onto preheated skillet at 375\u00b0 and bake until bubbles break and edges are cooked.
Turn and bake on other side.
Serve immediately with orange sauce.
Makes 24 (4-inch) cakes.
