1/4 c. canola oil
1 tsp. minced lemon zest
1 egg
2 slightly beaten egg whites
1 c. low-fat blend*
2 1/2 tsp. vanilla extract
2 tsp. fresh lemon juice
2 c. flour
1 Tbsp. baking powder
1 pt. raspberries
Preparation

*One cup nonfat plain yogurt and 1 cup nonfat or low-fat cottage cheese, mixed, but not food processed!
