Ingredients
    1 Tbsp. oil
    4 lb. bone-in pork loin roast
    salt and pepper
    2 lb. sweet potatoes or yams (about 4 medium)
    1 1/2 lb. parsnips, about 6
    1 onion
    1 tsp. dried thyme
Preparation
    Heat oven to 425\u00b0.
    In large frying pan, heat the oil over medium-high heat.
    Sprinkle meat with salt and pepper and cook until well browned on all sides, about 8 minutes.
