Pollo Encaldo Chicken Soup - cooking recipe
Ingredients

1 whole chicken, boiled and deboned
1/2 c. vermicelli
1 1/2 c. cooked rice
1 regular size can tomatoes, drained
1/2 lb. pork meat, cubed
2 carrots, peeled and diced
1 head cabbage, diced
2 or 3 potatoes, peeled and diced
Preparation

In a large pot brown cooked rice in 1 tablespoon butter, then add canned tomatoes and boiled and deboned chicken.
Simmer 20 minutes.
In another pan brown cubed pork meat and vegetables. After browning, add to rice and chicken mixture.
Add vermicelli and simmer for 10 to 15 minutes.
Add water as needed.
