Spicy Chicken And Peppers - cooking recipe
Ingredients

2 lb. chicken breasts, cut in strips
1 1/2 Tbsp. olive oil
4 Tbsp. Cajun spice
1 Tbsp. black pepper, freshly ground
1 Tbsp. chili powder
2 sweet red peppers, thinly sliced
1 large Vidalia onion, thinly sliced
2 cans stewed tomatoes
Preparation

Saute chicken breasts in 1 tablespoon olive oil until no longer pink.
Remove from pan; set aside.
Add 1/2 tablespoon olive oil and spices; mix together.
Add red peppers and onion; saute until onion is transparent.
Add the chicken and stewed tomatoes; simmer for approximately 1 hour.
Serve on split kaiser rolls.
