Lemon And Pine Nut Rice - cooking recipe

Ingredients
    2 c. chicken broth
    1 c. uncooked regular rice
    2 Tbsp. butter
    1/3 c. (1 oz.) pine nuts or shelled sunflower seeds
    2 Tbsp. chopped fresh parsley
    1 Tbsp. grated lemon peel
    2 Tbsp. lemon juice
Preparation
    Bring chicken stock to a boil in saucepan.
    Stir in rice. Cover and simmer 15 to 20 minutes until all liquid is absorbed. Melt butter in another saucepan over low heat.
    Cook and stir pine nuts or shell sunflower seeds in butter until golden brown.
    Stir in parsley, lemon peel and lemon juice. Pour nut/butter/juice mixture over hot rice. Stir to coat.
