Mid-Eastern Lentil Soup - cooking recipe

Ingredients
    1 Tbsp. oil
    1/2 c. each chopped onion, celery, grated carrot and apple
    1 glove garlic, minced
    1/2 c. red or green lentils
    2 c. chicken stock
    3/4 tsp. cumin
    3/4 tsp. coriander
    2 Tbsp. fresh parsley
    1/4 tsp. salt
Preparation
    Saute onion, celery and garlic in oil 2 to 3 minutes over medium heat.
    Rinse lentils and add to pan along with chicken stock. Cover and simmer 20 minutes. Add carrot, apple, cumin and coriander.
    Simmer until tender.
    Add parsley and salt to taste. Garnish with croutons.
