Crispy Eggplant - cooking recipe

Ingredients
    1/2 c. Hellmann's mayonnaise
    1 Tbsp. instant onion
    1/4 tsp. salt
    1/3 c. Italian bread crumbs
    1/3 c. Parmesan cheese
    1 eggplant, cut in 1/2-inch slices (don't peel)
Preparation
    In small bowl, stir together first 3 ingredients.
    Combine bread crumbs and Parmesan cheese. Brush both sides of eggplant with mayonnaise mixture.
    Coat with crumbs.
    Place on cookie sheet and bake in a 350\u00b0 oven until golden brown.
