Chocolate Chip Meringue Drops (Or Almond Meringue Drops) - cooking recipe

Ingredients
    2 egg whites (room temperature)
    1/2 c. sugar
    1 tsp. vanilla
    3 Tbsp. cocoa powder (not mix)
    1/2 c. semi-sweet chocolate chips
Preparation
    Preheat oven to 250\u00b0.
    Line two baking sheets with baking parchment (or aluminum foil).
    In the large bowl of an electric mixer, beat the egg whites at high speed until they hold stiff peaks.
    Beat in the sugar, 1 tablespoon at a time, then beat in the vanilla extract.
    Reduce mixer speed to low and beat in cocoa powder.
    Fold in chocolate chips with spatula.
    Drop by rounded teaspoon (1 inch apart) onto the baking sheets.
    Bake for 1 hour. Turn off the oven and dry the cookies in the oven for 2 hours longer.
    Store covered.
    Makes about 40 cookies.
