Marinated Mushrooms - cooking recipe

Ingredients
    1/3 c. good olive oil
    1/3 c. red wine vinegar
    2 Tbsp. brown sugar
    1 1/2 tsp. Coleman's dry mustard
    10 whole peppercorns
    pinch of salt
    1 lb. small, cleaned mushrooms
    1 sprig fresh oregano
Preparation
    Choose small, bite-size mushrooms for this dish.
    Combine the first 6 ingredients in a small saucepan.
    Heat gently until the sugar dissolves.
    Add the mushrooms and continue to heat for about 5 minutes, but do not boil.
    A small sliced onion could also be added at this point.
    Let the mixture cool; add the sprig of oregano, then refrigerate for at least a day to let the flavor marry.
    Makes about 3 cups.
