Aunt Mary'S Chili Sauce - cooking recipe

Ingredients
    1 c. chopped celery
    1 qt. tomatoes, peeled
    2 onions, chopped fine (medium size)
    1 green pepper, chopped fine
    1/2 pt. vinegar
    1 c. sugar
    1 Tbsp. salt
    1 tsp. ginger
    1 tsp. cinnamon
    1/2 tsp. ground cloves
    1/8 tsp. cayenne pepper
Preparation
    Peel and quarter tomatoes.
    Let stand at least 2 hours to drain off juice so it won't take so long to cook down.
    Four times this recipe will net about 7 to 8 pints.
    Mix all ingredients and cook until thick as desired (6+ hours).
    Cook slowly to prevent scorching.
    Keep stirring regularly throughout cooking.
    Place in clean, hot jars.
    Seal and water bath for 15 to 20 minutes.
    Very good served with roast beef or pork.
