Freezer Tomato Sauce - cooking recipe

Ingredients
    20 large tomatoes, washed, cored and cut into chunks
    4 c. onion, chopped (approximately 4 large)
    4 large carrots, grated or shredded
    1/2 c. chopped parsley
    3 Tbsp. sugar
    2 Tbsp. salt
    3/4 tsp. pepper
Preparation
    Place tomatoes in a 12-quart pan.
    Add onions, shredded carrots, parsley, sugar, salt and pepper.
    Bring slowly to a boil, stirring often.
    Lower heat and simmer 30 minutes.
    Cool slightly. Measure 3 cups at a time into blender.
    Cover blender and blend at low speed for 1 minute.
    Sauce may be thawed and used over pasta, meat or in any dish requiring tomato sauce.
    Keeps 1 year in freezer.
