Fruit Salad(For Diabetics) - cooking recipe

Ingredients
    2 Tbsp. unflavored gelatin powder
    1 qt. unsweetened fruit juice
    2 Tbsp. lemon juice
    2 Tbsp. low calorie sweetener or 4 packets artificial sweetener
Preparation
    In saucepan, soften gelatin powder in the fruit juice.
    Bring mixture to a boil to dissolve gelatin.
    Remove from heat and stir in sweetener.
    Fill jars, leaving 1/4-inch of space at top.
    Do not process or freeze.
    Add spices or coloring, if desired. Yield: 4 half-pints.
