Fayette County Beef Stew - cooking recipe

Ingredients
    2 lbs. beef stew meat, cubed
    1 med. green pepper, chopped
    1 c. celery, chopped
    1 large onion, chopped
    8 carrots, sliced in 1/2-inch pieces
    4 med. potatoes, small cubes
    3/4 lb. fresh green beans
    1 8oz. can water chestnuts
    1 lb. can whole tomatoes
    1 Tbsp. sugar
    3 Tbsp. tapioca
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Brown meat over medium heat until lightly browned.
    Add 1/2 c. water to pan; stir to loosen any drippings.
    Place meat in a large roasting pan and mix in all remaining ingredients.
    Cover and bake in a 300\u00b0 oven for 3 1/2 hrs.
    Makes 6 servings - 580 calories each serving.
