Taco Salad - cooking recipe
Ingredients

1 1/2 lb. ground beef
1 1/2 c. diced onion
1 c. diced celery
1 c. diced green pepper
3 cloves garlic, diced (optional)
1 lb. Velveeta cheese
1 (8 oz.) can Ortega tomatoes and green chili peppers
1 head lettuce
2 large firm tomatoes
1 (1 lb.) pkg. Fritos
salt, chili powder and ground cumin to taste
Preparation

Fry the ground beef and small amount of oil until brown. Saute onion, celery and green pepper in oil.
Combine the meat and vegetables; simmer for 15 minutes.
Season with salt.
Place chili powder and ground cumin in top of double boiler.
Melt cheese; add can of tomatoes to spices and chili pepper.
You may only add 1/2 can, if desired.
Cut lettuce coarsely; cut tomatoes in chunks. Mix together.
Add Fritos; mix all ingredients, except melted cheese mixture.
Top with hot cheese; mix again.
Serve immediately.
Serves 10 to 12.
