Cheese Potato Soup - cooking recipe

Ingredients
    1 c. butter
    1 c. celery
    1 c. carrots
    2/3 c. onion
    1/2 c. green pepper
    1 c. potatoes
    12 Tbsp. flour
    2 tsp. salt
    4 c. chicken stock
    2 Tbsp. Parmesan cheese
    8 c. milk
    4 c. sharp American cheese
Preparation
    Chop celery, carrots, onion and green pepper very fine.
    Chop potatoes small.
    Melt butter and saute all vegetables until they are tender. Stir in flour, then add chicken stock and milk.
    Cook slowly until mixture thickens. Add American cheese and stir until all melted. When serving, add Parmesan cheese, if desired.
