Onion Rings - cooking recipe
Ingredients

2 large Spanish onions
2 1/4 c. flour, divided
1 1/4 tsp. baking powder
1 1/4 tsp. salt
1/4 tsp. white pepper
2 c. buttermilk
1 1/2 Tbsp. vegetable oil
2 eggs, separated
Preparation

Peel onions, cut into 1/2-inch slices and separate into rings. Place in a plastic or paper bag and add 1 cup flour. Shake bag until onions are coated. Combine remaining 1 1/4 cups flour, baking powder and
next 4 ingredients; stir in egg yolks, mixing well. Beat egg whites at room temperature until stiff peaks form. Fold into batter. Dip onion rings into batter. Pour oil to depth of 2-inches into a Dutch oven; heat to 375\u00b0. Fry, turning once, until golden brown. Drain on paper towels and serve immediately. Yield: 4 servings.
