Zucchini Oatmeal Muffins - cooking recipe
Ingredients

2 1/2 c. all-purpose flour
1 1/2 c. sugar
1 c. pecans or walnuts, chopped
1/2 c. quick oats (uncooked)
1 Tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
4 eggs, beaten slightly
1 medium zucchini (about 10 oz.), shredded
3/4 c. oil
Preparation

Grease muffin pans.
Preheat oven to 400\u00b0.
In large bowl measure first seven ingredients (dry ingredients).
Stir with fork to mix.
In medium bowl beat eggs slightly.
Stir in zucchini and oil.
Stir this wet mixture all at once into the flour mixture, just until moistened.
Spoon into muffin pans.
Bake 25 minutes for 3 inch cups, 20 minutes for 2 1/2 inch cups or until pick inserted in center comes out clean.
Cool.
Makes 12 to 18 muffins.
