2 lb. chicken, cut up
buttermilk
flour
salt and pepper to taste
Preparation

Soak chicken in
buttermilk
at
least\t30 minutes.
In paper bag, put flour
and
seasonings.
Add chicken, close bag and shake vigorously.
(Secret
to
good browned fried chicken is to flour it twice.)\tRemove\tchicken to dry on waxed paper, then replace chicken in\tflour
and shake again.
Use electric or
iron skillet.
Brown
chicken
on
both sides in hot oil. Reduce heat and cook, uncovered, until done.
