Potato-Cheese Soup - cooking recipe
Ingredients

3 medium potatoes, peeled and cubed
2 c. water
1 small onion, chopped
1/4 c. chopped bell pepper
3 Tbsp. melted butter
2 Tbsp. all-purpose flour
2 c. milk
1 c. shredded Cheddar cheese
1/8 tsp. pepper
salt to taste
Preparation

Cook potatoes in water until tender; drain, reserving liquid. Saute onion and green pepper in butter until tender.
Add flour, stirring until smooth.
Gradually add milk; cook, stirring constantly, until slightly thickened.
Add enough water to potato liquid to make two cups.
Add to milk mixture along with potatoes, cheese, pepper and salt.
Cook, stirring constantly, until cheese is melted and soup is thoroughly heated.
