Summertime Potato Salad - cooking recipe

Ingredients
    2 lb. long white or red potatoes
    water
    1/3 c. mayonnaise
    1/3 c. sour cream
    2 Tbsp. parsley flakes
    2 Tbsp. soy sauce
    1 Tbsp. prepared horseradish
    1/2 tsp. pepper
    1/2 c. minced onions
    4 hard-cooked eggs, peeled and cut into wedges
    fresh peach slices
Preparation
    Peel potatoes; cut into 3/4-inch cubes.
    Bring water to a boil; add potatoes.
    Return to a boil; cook about 6 minutes or until tender, being careful not to overcook.
    Drain thoroughly; transfer to a large bowl.
    Chill.
