Ingredients

1/2 c. butter
2 c. plain flour
1 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 eggs, separated
2 c. buttermilk
Preparation

Heat waffle iron while preparing batter.
Melt butter; set aside to cool.
Sift dry ingredients together; set aside.
Beat egg yolks until thick.
Gradually add butter and buttermilk.
Beat until well blended.
Add liquid mixture to dry ingredients.
Mix until batter is smooth.
Beat egg whites until round peaks form. Gently fold into batter.
Pour batter into center of hot waffle iron and cook 4 to 5 minutes.
Serve immediately.
