Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplants
    2 eggs, well beaten
    1 onion
    1 can mushroom soup
    salt and pepper
    2 c. grated cheese
    2 c. cracker crumbs
Preparation
    Boil eggplants, drain, mash and mix with the 2 well beaten eggs.
    Add chopped onion, soup, salt and pepper.
    Layer all ingredients with cracker crumbs and grated cheese.
