Salmon Rice Salad - cooking recipe

Ingredients
    1 (15 to 16 oz.) can salmon, drained and broken into chunks
    1 c. cooked rice
    1 hard-cooked egg
    2 Tbsp. lemon juice
    1/4 c. cooked peas
    1 Tbsp. mayonnaise
    2 tsp. finely grated onion
    1/4 tsp. salt
    1/8 tsp. pepper
    lettuce
Preparation
    Put salmon, rice, egg, lemon juice, mayonnaise, onion, salt and pepper in bowl. Toss thoroughly with a fork.
    Gently mix in peas.
    Serve on lettuce leaves.
    Serve with tomato soup and muffins.
