Maque Choux(Smothered Corn) - cooking recipe

Ingredients
    3/4 c. chopped onion
    10 ears fresh corn, cut from cob
    1/3 c. minced bell pepper
    3/4 c. bacon grease
    4 Creole or garden fresh tomatoes, peeled and chopped
    1 tsp. salt
    1 tsp. black pepper
Preparation
    Saute onions in bacon grease until transparent, about 5 minutes.
    Add corn and cook 10 minutes, stirring constantly.
    Add tomatoes and green pepper; cook 5 minutes or until very soft.
    May be served as is or stuffed into cooked bell pepper or tomato and browned in oven.
